I don't know how to make a real frittata. Makes 2 large servings.

Recipe Ingredients for Scrambled frittata

5 eggs, lightly beaten
1 tomato, diced
8 ounces spinach, chopped
2 cloves garlic, minced
1/2 tbsp butter
3 ounces feta cheese

Recipe Directions for Scrambled frittata

  1. Beat eggs, add to skillet with butter.

  2. When you would normally start to scramble the eggs, add the garlic, tomato, and half of the feta. Scramble.

  3. Just before serving, add the spinach and the rest of the feta. Serve hot.
