Scrambled eggs with spinach mushrooms and onions

Recipe Ingredients for Scrambled eggs with spinach mushrooms and onions

2 eggs
4 egg whites
1 cup spinach, raw
1/2 cup red onions, chopped
1 1/2 cup mushrooms
3 oz low fat cheese
3 T flax seed meal
3 T wheat germ

Recipe Directions for Scrambled eggs with spinach mushrooms and onions

  1. Chop red onion and saute

  2. After 2 mins, add mushrooms.

  3. Let them reduce, then add sinach leaves to wilt for one minute

  4. Mix eggs and egg whites, pour into pan and scramble

  5. melt cheese sticks over the top for one minute.

  6. Divide into servings; sprikle each with one T wheat germ, and one T flax seed meal.
