Recipe Ingredients for scrambled egg whites with veggies

1 whole egg
5 egg whites
3 oz 2% milk
2 tablespoons olive oil
1 oz cheddar cheese

Recipe Directions for scrambled egg whites with veggies

  1. gently sautee chopped onion, asparagus, mushrooms and red bell pepper in a table spoon 1/2 of olive oil.

  2. Scramble one whole egg, and five egg whites, add salt, pepper, and 2% milk.

  3. when veggies are tender, add the remaining 1/2 oz olive oil and pour egg mixture over it. move the eggs around with a spatula to prevent scorching, just before the eggs are done, add the shredded cheddar cheese, and fold it in. remove from heat and serve.
