Sort of like quiche w/o the crust. Super-easy and great for large gatherings.

Recipe Ingredients for Scrambled Egg Muffins

6 cups egg beaters
1/4 cup frozen spinach , thawed & drained
1/4 cup chopped onions
3 ounces mushrooms, chopped
1/2 cup diced tomatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Recipe Directions for Scrambled Egg Muffins

  1. Preheat oven to 350.

  2. Chopp up all veggies.

  3. Combine all ingrediets together.

  4. Spoon into muffin cups and bake 20-25 minutes or until set. Knife/toothpick should come out clean.
