Recipe Ingredients for Scramble Eggs w/ Tomatoes & Mushrooms

8 eggs
1 tomato, chopped & seeded
1/2 c mushrooms, chopped
1 tbsp basil
1 tsp thyme
1 Cooking spray, olive oil
1 Salt to taste
1 Pepper to taste

Recipe Directions for Scramble Eggs w/ Tomatoes & Mushrooms

  1. Saute mushrooms in cooking spray over medium heat. 5-6 minutes. Pour into bowl. Mix mushrooms and tomatoes. Wipe out pan.

  2. Spray pan with cooking spray. Heat over medium high.

  3. Beat eggs. Pour into pan. Cook until starting to turn solid. Add mushroom & tomato mixture. Sprinkle with salt & pepper.

  4. Divide among plates and serve.
