A yummy concoction my husband came up with. Its kinda high in calories but chock full of veggies. And has a lot of staying power. Not gonna feel hungry after this meal!

Recipe Ingredients for Scotty's Concoction! Yummo! :)

1 large green pepper, chopped
1 cup canned diced tomatoes, drained
1 cup canned black beans, drained and rinsed
1 cup pinto beans, canned, drained
1 cup canned corn
220 g Sausage, kielbasa, lite, chopped
1/2 large onion, diced
1 cup canned carrots, drained and chopped
1 tsp. Italian seasoning
1 tsp. season salt
1 tsp. onion powder
2 tsp. garlic powder
2 cups instant rice, uncooked

Recipe Directions for Scotty's Concoction! Yummo! :)

  1. Saute kielbasa sausage, onion and green pepper in large pan until onions are translucent.

  2. Mix in other ingredients (except rice) and cook through.

  3. Meanwhile, make 4 servings instant rice.

  4. Serve mixture over bed of rice.
