I'm experimenting, trying to come up with a low-carb, high protein lunch burrito. Probably should get rid of the mushrooms next time and figure out another veggie to add to the stir-fry.

Recipe Ingredients for Scott's Steak Burrito

1/2 lbs petite steak, sliced
80 g asparagus, sliced into 1/3 inch chunks
2 oz snow peas, sliced into 1/3 inch chunks
2 tsp olive oil
2 oz shiitake mushrooms, sliced into small pieces
1 tbsp garlic, crushed
3 oz guacamole
2 tbsp salsa
3 oz kraft shredded mexican style cheese

Recipe Directions for Scott's Steak Burrito

  1. Prepare all of the ingredients.

  2. Heat a skillet to medium-high.

  3. Add oil to the skillet.

  4. Put in half of garlic along with the mushrooms. Cook for 30 seconds.

  5. Add beef, asparagus, and rest of garlic.

  6. Stir-fry until done.

  7. Pour into bowl, keeping as much juice as possible in skillet.

  8. Add snow peas to skillet. Stir-fry for 1 minute.

  9. Pour snow peas into bowl with meat mixture.

  10. Put guacamole, salsa, and cheese into meat mixture. Stir well.

  11. Eat either with a tortilla or in a bowl.
