Can use either light or dark brown sugar.

Recipe Ingredients for Scottish Shortbread

1 pound butter
1 cup brown sugar
4 1/2 cups flour

Recipe Directions for Scottish Shortbread

  1. Cream butter and sugar. Add 3 3/4 cup flour, mix well.

  2. Sprinkle a board with flour and knead dough for 5 minutes.

  3. Roll to 1/2" thickness

  4. Cut into 3" x 1" strips

  5. Place 1" apart on ungreased baking sheet.

  6. Prick with fork.

  7. Bake at 325 degrees for 20-25 minutes or until lightly browned.

  8. Remove to racks to cool.
