This recipie takes a standard shortbread recipie and produces a fine and quite dry (melt in your mouth) shortbread.

Recipe Ingredients for Scottish Shortbread

4 cups Flour
1 cup Icing Sugar
1 pound Butter
1 Egg Yolk

Recipe Directions for Scottish Shortbread

  1. Allow Butter to come to room temperature and place on counter (so you can knead)

  2. Make a hollow in the butter add egg yolk

  3. Add Flour and Icing sugar on top of butter and egg yolk

  4. Knead until if forms a smooth ball

  5. Using the heel of your hand spread the mixture over a standard cookie sheet (slightly less than 1/2 inch thick)

  6. Prick thouroughly with a fork

  7. Place in 325 degree over for 10 minutes, reduce heat to 275 and continue to bake until the surface starts to lightly brown. (approx 30-40 minutes)

  8. Remove from heat and slice into 1x1.5 inch pieces while still hot.

  9. Allow to cool and store in an airtight container.
