Oat breakfast "cookie" as a change to bread

Recipe Ingredients for Scottish Oatcakes

1 cup dry Old Fashioned Quaker Oats
1/2 cup dry Quick Quaker Oats
1/4 cup, unpacked Sugars, Brown
1/2 tsp Baking Soda
1/4 tsp Salt, Table
1/4 cup Butter
1 tsp Juice Lemon from Concentrate
0.33 cup Milk, Lowfat, Fluid, 1% Milkfat
1/2 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1/2 cup Wheat Flour, whole grain

Recipe Directions for Scottish Oatcakes

  1. In large bowl, mix oats, quick oats, flours,brown sugar, baking soda and salt.

  2. Cut in butter until resembles coarse crumbs.

  3. Place lemon juice in a measuring cup, Add milk to about 1/3 cup. Let set for few minutes. Add to oat mixture until holds together.

  4. Dump mixture onto piece of wax paper and roll out to 1 to 1/4 inch thickness with floured rolling pin.

  5. Cut into 10 even pieces.( I used a roughly 2 1/2 inch cup as a cutter).

  6. Place in pre-heated 350 F oven. Bake until lightly brown - 15 to 18 minutes.

  7. Cool on a rack. (Although, tastes great warm.)
