Great tasting curry. Nice served with Thai jasmine rice.

Recipe Ingredients for Scotsfirth Chicken Curry

1 lb. boneless skinless chicken breast
3 cloves garlic
19 oz. coconut milk
1 tbsp. red curry paste
2 tbsp. fish sauce
1 tsp. lime juice
1/2 tsp. brown sugar
1/2 cup onion
1/2 cup carrots
1 cup bok choy

Recipe Directions for Scotsfirth Chicken Curry

  1. Slice chicken, crush garlic. In skillet cook over medium heat with the garlic.

  2. While cooking, slice onion, carrots, and bok choy. Set aside.

  3. Once chicken is cooked through but not brown add coconut milk, red curry paste, fish sauce, and brown sugar. Turn temp down and simmer about 15 minutes.

  4. If you are serving with Thai jasmine rice this is a good time to cook your rice.

  5. Add the onion, carrots, & bok choy and simmer for 5 more minutes.
