A lovely alternative to heavy coffee-shop pastries, these are light and delicious, and make a perfect biscuit base for shortcakes.

Recipe Ingredients for Scotch Scones

2 cups flour
2 tbsp sugar
1 tbsp baking powder
1 tsp salt
1/4 tsp baking soda
1/4 cup oil
1/2 cup fat free plain yogurt
3 tbsp skim milk
1 egg, slightly beaten
1 tsp skim milk, for brushing on top
2 tsp sugar, for sprinkling on top

Recipe Directions for Scotch Scones

Preheat oven to 425 F. In mixing bowl, combine dry ingredients. (At this point add frozen blueberries or strawberries, or dried cranberries or raisins, if you like) In a separate bowl combine the wet ingredients and then add, stirring until the dough clings together. On a floured surface, toss the dough to lightly coat with flour. Knead 12 to 15 times. Divide the dough in half. Pat each ball of dough into a 6-inch circle with top slighly rounded. Brush the surface with milk; sprinkle with sugar. Cut each circle into 6 wedges. Place, 2 inches apart, on a lightly greased baking sheet. Bake 12 to 15 minutes or until golden brown. Serve hot with butter and honey or jam, or use as the biscuits for strawberry shortcake.
