Incredibly easy to make, these are always a crowd pleaser. 1/2 cup of raisins, currants, or dried cranberries can be used in place of the blueberries.

Recipe Ingredients for Scotch Scones (Pillsbury Family Cookbook)

1 c. all purpose flour
1 c. whole wheat flour
2 T. granulated sugar
1 T. baking powder
1 t. salt
1/4 t. baking soda
1/4 c. canola oil
1/2 c. sour cream
1/4 c. skim milk
1 egg
1 c. blueberries
2 t. milk
2 t. sugar

Recipe Directions for Scotch Scones (Pillsbury Family Cookbook)

  1. Preheat the oven to 425 F and line a cookie sheet with parchment paper.

  2. In a large bowl combine the dry ingredients and mix well. In a two-cup measuring cup combine the wet ingredients and mix well.

  3. Gently stir the wet ingredients into the dry ingredients and turn out onto a floured surface. Knead 2-3 times to bring the dough together. Divide evenly into two parts. Pat the dough into an 8" circle, sprinkle half of the blueberries in the center and fold the edges over, working the blueberries into the dough. Flip the dough over, pat into a 6" round, wet the top with 1 t. milk and sprinkle with 1 t. sugar. Cut into 6 even wedges. Repeat with the other half of the dough.

  4. Bake at 425 for 12-15 minutes.
