Hardboiled eggs wrapped in spicy sausage and covered with breadcrumbs. NOT DIET FOOD! Serve with Brown Mustard. Good hot or cold. Also good cold, sliced in a sandwich with tomato and lettuce!

Recipe Ingredients for Scotch Eggs

1 lb HOT sausage
1 lb MILD sausage
1/2 cup plain breadcrumbs
1 cup italian breadcrumbs
2 eggs
4 tablespoons beer (lager, stout)
8 hardboiled eggs (cooled and peeled)

Recipe Directions for Scotch Eggs

  1. Combine sausage, raw eggs, plain breadcrumbs, and beer.

  2. Divide mixture into eight parts.

  3. Wrap individual hardboiled eggs in sausage mixture.

  4. Coat heavily with Italian breadcrumbs.

  5. BAKE @ 475 degrees for 30 minutes.

  6. Allow space between eggs on pan to provide even cooking.

  7. Let stand 5 minutes before serving.
