Makes 6 servings



Substantial soup. For authenticity replace summer squash with turnip, and use 450g neck of lamb rather than lamb meat. Serve with potatoes for a main meal.

Recipe Ingredients for scotch broth

150 g lamb, trimmed of excess fat
2 1/5 litres water
1 tsp salt
50 g pearl barley, rinsed and drained
50 g dried peas, soaked overnight and drained
1 large onion, chopped
1 leek, chopped
4 carrots, sliced
200 g winter squash, diced
200 g celery, sliced
200 g cabbage, leaves shredded
1 tbsp parsley, chopped

Recipe Directions for scotch broth

Simmer everything except the cabbage for 2h. Add cabbage, season with salt and plenty pepper and simmer 15min more. Serve hot
