I found these online at http://www.karenskitchen.com/a/recipe_scot_oatcakes.htm and wanted to try them. Putting them through the recipe analyzer to get the nutrition info. Here's hoping they are good!

Recipe Ingredients for Scot Oatcakes

3 cups rolled oats
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons sugar
2 tablespoons vegetable oil
1/2 cup water
2 teaspoons vanilla

Recipe Directions for Scot Oatcakes

  1. Mix all ingredients into a bowl and let sit a minute.

  2. The rolled oats will just look like wet oats at first, but you have to start stirring them, and the moisture will break down the grain.

  3. Begin to knead the rather crumbly dough. It will very then form a stiff dough.

  4. Add enough flour to roll out like you would for skinny biscuits (about 1/4 inch thick.

  5. Cut with cookie cutter (biscuit size), or make a rectangle and cut them 4x5 for 20 biscuits or bars.

  6. Bake 12 minutes at 350 degrees. Makes 20 biscuits.
