Recipe Ingredients for Scones

2 cups (280 grams) all-purpose flour
2 teaspoons (8 grams) baking powder
2 tablespoons (28 grams) sugar
1/2 teaspoon (3 grams) salt
1/3 cup (76 grams) unsalted butter
1/2 cup (125 ml) milk
1 large egg, beaten

Recipe Directions for Scones

  1. Preheat oven to 400 F (205 C) and place rack in center of oven. Line a baking pan with parchment paper or lightly spray with a non-stick vegetableoil.

  2. For the glaze, mix together the beaten egg with the milk and set aside.

  3. In a large bowl whisk together flour, baking powder, sugar and salt.

  4. In a measuring cup combine the milk with

  5. the beaten egg. With a pastry blender, two knives, or your fingertips, rub the butter into the flour mixture until it resembles coarse crumbs.

  6. Make a well in the center of the dry ingredients and add the liquid. Mix together with a wooden spoon, making sure you do not overwork the dough. Just mix until dough forms moist clumps.

  7. Gather dough together and transfer to

  8. a lightly floured surface. Gently

  9. knead dough until it forms a ball (10

  10. seconds). Roll out dough until it is 1

  11. inch (2.5 cm) thick. With a floured 2

  12. 1/2 inch (6 cm) cutter, cut out rounds

  13. and place on prepared baking pan.

  14. Knead together scraps and cut out remaining

  15. scones.

  16. Brush scones with

  17. glaze (1 egg beaten+1 tbsp milk) and bake for 15 minutes or until

  18. lightly brown on top. Remove from

  19. oven and cool on wire rack. Makes 8

  20. scones.
