Makes 12 servings

From Cooking Light. You can use blueberries, or other stuff, in place of the raisins.

Recipe Ingredients for Scones

2 cups all-purpose flour
3 tablespoons granulated sugar
1 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons butter, cut into pieces
1/2 cup skim milk
1/4 teaspoon vanilla extract
1 large egg white, lightly beaten
1/3 cup raisins, or dried cranberries
2 teaspoons skim milk
2 teaspoons turbinado sugar

Recipe Directions for Scones

  1. Preheat oven to 425 degrees.

  2. Sift together first four ingredients in a bowl. Add butter and cut in with a pastry blender or two knives until it resembles coarse meal. Mix milk, vanilla extract, and egg white together in a small bowl; add to flour mixture, stirring just until moistened. Dough will be soft.

  3. Turn out onto a lightly floured surface. Sprinkle currants on top and knead gently, just until the fruit is evenly distributed. Transfer dough to a baking sheet and gently flatten into an 8-inch circle. Score deeply into 12 wedges with a knife.

  4. Brush with remaining 2 teaspoons milk and sprinkle with sugar. Bake for 17 minutes, until golden brown.
