These delicious scones are worth eating, even though they're low in calories. Add some blueberries and they're even better!

Recipe Ingredients for Scones (Low Calorie)

1 T Smart Balance Light
2 T Apple Sauce
3 T White Sugar
3 T Brown Sugar
1/4 cup soy milk
1/4 cup water
1/2 egg
2 c whole wheat pastry flour
1/8 tsp baking soda

Recipe Directions for Scones (Low Calorie)

  1. In a small bowl, cream Smart Balance Light with white and brown sugars, add applesauce and any flavorings (I like to add almond extract).

  2. In a medium Pyrex measuring cup, combine soy milk, egg, water.

  3. In a separate bowl mix together rest of dry ingredients (flour and baking soda).

  4. Alternate mixing the milk mixture and flour mixture. Mix well.

  5. On a cookie sheet, shape 16-18 scones.

  6. Bake at 350 for 15-20 minutes.
