Recipe Ingredients for SCD Sturdy Sandwich Bread

6 tbs olive oil
5 cloves garlic, pressed
6 cups almond meal
3 tsp baking soda
1 tsp salt
1 1/2 cups club soda
4 eggs

Recipe Directions for SCD Sturdy Sandwich Bread

  1. heat oven to 350 F

  2. Heat oil in pan

  3. Turn off and add garlic and stir until golden, set aside

  4. lightly coat loaf pan with veggie oil

  5. in a mixing bowl combine almond flour, baking soda and salt.

  6. add club soda, eggs and 1 tbs olive oil

  7. mix thouroughly by hand or with an electric beater

  8. transfer dough to pan

  9. bake 1 hour

  10. transfer bread to a wire rack to cool 20 mins

  11. increase oven temp to 400 F

  12. With serrated knife cut loaf into thin slices

  13. place slices on a baking sheet

  14. brush with half the remaining olive oil.

  15. Bake 10-15 mins

  16. remove baking sheet from oven flip slices and brush with remaining oil.

  17. bake additional 10-15mins until golden and crisp

  18. Cool toasts completeley before storing in an airtight container for up to 3 days or in freezer up to 2 months
