Recipe Ingredients for SCD Shepherd's Pie

1 1/2 tbs olive oil, divided
2 lbs ground beef
5 tsp cumin powder
1 tsp salt
1/2 tsp pepper
10 spring onions, finely chopped
2 tbs lime juice
2 head cauliflower, chopped
2 tbs butter
3/4 c cheddar cheese, grated
2 c carrots, sliced
2 c peas

Recipe Directions for SCD Shepherd's Pie

  1. Preheat oven to 325 F and grease an ovenproof baking dish w/ olive oil

  2. On the stove top, heat remaining olive oil and saute ground beef for 2 minutes or until brown

  3. add the cumin powder, salt, and pepper and cook over low heat until the ground beef is cooked through

  4. Add the onions, carrots and peas to the mixture and stir for about 4 minutes, or until they soften slightly.

  5. Remove the pan from stove and mix in lime juice and place the mixture into the prepared ovenproof baking dish

  6. Meanwhile, steam cauliflower until tender. Puree or blend the cauliflower with butter in a food processor until smooth (like mashed potatoes)

  7. Spread cauliflower evenly on top of the cooked ground beef mixture. Add the grated cheese on top

  8. Bake for 15 - 20 minutes
