Recipe Ingredients for SCD Greek Vegetable Salad

1 cucumber, peeled and chopped
1 tomato, large. Seeded and chopped
1 green pepper, chopped
4 green onions, chopped
10 black olives, pitted
1/2 c blue cheese, crumbled
1/3 c olive oil
3 tbs cider vinegar
1 tsp salt
1 tsp dried oregano
1/2 tsp honey

Recipe Directions for SCD Greek Vegetable Salad

  1. Salad:

  2. In serving bowl, combine cucumber, tomato, green pepper, onions, Olives, and blue cheese.

  3. Dressing:

  4. In a jar w/ tight-fitting lid, combine: olive oil, cider vinegar, salt, oregano, honey.

  5. Shake well

  6. Drizzle over salad

  7. Toss to coat

  8. Serve w/ slotted spoon
