Basic chicken soup based on Specific Carbohydrate Diet.

Recipe Ingredients for SCD Chicken Soup (Homemade)

8 oz chicken legs
1 lb carrots, chopped
1 celery stalk, chopped
1 large squash, chopped
1/4 cup parsley, chopped
1 large onion, chopped
1 tsp nutmeg
1/2 tsp cayenne pepper
1 salt to taste
60 g chicken thighs, baked and chopped
2 cups frozen green beans, steamed

Recipe Directions for SCD Chicken Soup (Homemade)

  1. Fill a pot with the chicken leg quarters, carrots, celery, butternut squash, parsley, onion, nutmeg, cayenne pepper, and salt. Bring to a boil and simmer for three to four hours. Remove bubbles that form at top of water in first half hour.

  2. After simmering is finished, drain the stock from the vegetables and chicken. Separate the vegetables and blend them. Separate the chicken meat from the bones and skin.

  3. Remove the grease from the chicken stock. Add the blended vegetables and chicken meat.

  4. Bake the chicken thighs and then chop them into bite-sized pieces. Steam the green beans. Add both to the soup before serving.
