Recipe Ingredients for Scarlet Rice

1 teaspoon olive oil
2 cloves garlic
1 tbsp,+crumbled bay leaf
3/4 cup brown rice
1 3/4 cup vegetable broth
1/4 cup water
50 gram beet
2 tablespoons lemon juice
1 tablespoon fresh dill

Recipe Directions for Scarlet Rice

  1. Saute garlic.

  2. Add bay leaf, rice, broth and water. Cook until most of water is absorbed. Some water must remain to cook beet.

  3. Add grated beet. Cook until done.

  4. Remove from heat. Add lemon juice and let sit at least 10 minutes. Serve garnished with chopped fresh dill.
