Creamy, but not high in fat--modified to include all of the vegetables in the original recipe but reduce the cream without losing the creamy texture. This is a filling main dish that can warm a cold day or add color to a spring luncheon. Great with whole grain warm bread.

Recipe Ingredients for Scandinavian Cream Vegetable Soup (modified)

2 tbsp olive oil
12 oz. potatoes
1 cup cauliflower
1 cup carrots, chopped
8 radishes
1/2 onion, chopped
8 oz. green beans
8 oz. frozen peas
1 pkg. frozen spinach
2 tbsp dill
32 oz. fat-free chicken broth, reduced sodium
16 oz. Half & Half, no fat
3 cups skim milk
1/2 pint cream

Recipe Directions for Scandinavian Cream Vegetable Soup (modified)

Heat olive oil. Add chopped onion, potatoes, carrots, and green beans and saute until onions are softened. Add broth to the mixture and bring to a boil. Boil the mixture for about 10 minutes.Add radishes, cauliflower, and all vegetables except frozen peas and spinach. Cook for 5 to 10 minutes or until green beans and carrots are softened, but not soggy. Add peas and spinach and cook for 6 8 minues. Add pepper and dill. Pour in cream and milk and half & half and stir over moderate heat until the soup is hot, but not boiling. Adjust seasoning to taste. i did not add salt. It tastes slightly bland, but I didn't want to add the sodium.
