Scallops with vegetables and tomatoes

Recipe Ingredients for Scallops with Zucchini and tomatoes

1 lb scallops
3 cloves garlic
6 small zucchini
4 plum tomatoes
1 medium red pepper
1/2 large red onion
1 tbsp olive oil
1 red (2 g) pepper flakes (tsp)
1 cup fresh chopped basil

Recipe Directions for Scallops with Zucchini and tomatoes

  1. Heat oil in large skillet. Add garlic and cook until tender. Add zucchini, red pepper, onion, and red pepper flakes and cook until tender. Add chopped tomatoes, scallops, and fresh basil. Simmer for 5 minutes or until scallops are opaque.

  2. Pour sauce over pasta or spaghetti squash and sprinkle with parmesan cheese.
