Recipe Ingredients for Scallops with Succotash and Parsley Drizzle

2 1/2 cups corn
2 tsp olive oil
1 cup diced onion
2 cloves garlic, minced
10 ounces lima beans
1/2 lb zucchini, quartered and sliced
1 pint grape tomatoes, halved
1 1/4 lb scallops
1/4 tsp salt
1/4 tsp black pepper
1 tbsp cider vinegar
1/4 cup chopped fresh basil
1 cup parsley
2 tbsp olive oil
1 tbsp lemon juice
2 tbsp water

Recipe Directions for Scallops with Succotash and Parsley Drizzle

  1. Heat oil in a large skillet over medium heat. Add the onion and cook, stirring a few times until soft, about 2 minutes. Add garlic and cook for 1 minute. Stir in the corn, lima beans, zucchini, and tomatoes and cook, stirring occasionally, until the vegetables are tender, about 7 minutes.

  2. Coat a large nonstick skillet or grill pan with cooking spray and preheat over medium-high heat. Pat scallops dry and sprinkle with salt and pepper. Set scallops in the hot pan and cook until the insides are opaque, 5 to 6 minutes, turning once.

  3. Puree the parsley, olive oil, lemon juice and water in a blender.

  4. Stir the vinegar and basil into the succotash, season with salt and pepper and serve topped with the grilled scallops and the parsley mixture.
