Lower fat version of a family favorite

Recipe Ingredients for Scallops and Rotini

12 oz. scallops
8 oz. rotini, tri-color
1 tbsp. olive oil
2 cloves chopped garlic
1/2 medium onion
2 tbsp. chopped basil
1 tbsp. chopped parsley
1 tbsp. chopped oregano
1 tbsp. butter
2 tbsp. flour
1 cup milk 1%
1 cup chicken broth
2 tbsp. parmesan cheese

Recipe Directions for Scallops and Rotini

  1. Cook pasta

  2. Make a standard cream sauce with the butter, flour (salt and pepper to taste), milk and chicken broth

  3. Add parmesan cheese to cream sauce, set aside

  4. Saute onion in olive oil until soft, over low heat

  5. Add garlic and herbs, cook another minute

  6. Add scallops, raise heat slightly, cover - stir occasionally - cook about 5 minutes until scallops are opaque.

  7. Add scallop mixture to cream sauce

  8. Serve scallops over pasta
