From Chef Herbert Evers, San Francisco, CA. I substituted the heavy cream with fat-free half and half -- almost as good (not quite) but much healthier. Serve with rice and a green veggie.

Recipe Ingredients for Scallops Mornay

1 leek, julienned, white part only
3/4 lb scallops (large and dried)
4 mushrooms, sliced
1 tsp. garlic, minced
2 ounces white wine
6 ounces fat-free half and half
2 ounces butter, in small pieces
2 ounces prosciutto, sliced in 2? strips
2 ounces parmesan, grated

Recipe Directions for Scallops Mornay

  1. Toss the julienned leaks in oil and place on a baking tray. Bake at 400 for about 10-15 minutes, tossing occasionally, until crisp and golden brown. Dry on paper towels.

  2. Coat a sauce pan lightly with olive oil and saute the scallops in a very hot pan for a few minutes until browned on both sides. Set aside.

  3. Reduce the pan heat to low and add the mushrooms and garlic. Saute until the mushrooms are cooked and the liquid is absorbed.

  4. Add white wine to deglaze the pan. Add the cream and the prosciutto. Reduce until sauce has thickened. Swirl in the butter and season with salt and pepper to taste.

  5. Put scallops in a small oven-safe dish and spoon sauce over the scallops. Sprinkle with Parmesan and broil until cheese melts.

  6. To serve, dish scallops and sauce to plates and top with crispy leeks.
