Recipe Ingredients for scallops and kale over spaghetti squash

2 cup Squash, Winter, Spaghetti
1 cup, chopped Kale
1 tbsp Extra Virgin Olive Oil
0.25 cup Onions
5.3 oz Scallops Fresh Seafood
1 tbsp Butter

Recipe Directions for scallops and kale over spaghetti squash

  1. Poke some vent holes in the squash

  2. Bake Spaghetti Squash whole in oven at 350f (60 mins)

  3. Cut cooked squash in half lengthwise.

  4. Scoop out seeds.

  5. Scrape squash into "noodles".

  6. Blanche kale in boiling water for 3 mins

  7. Cook scallops (2 mins) in olive oil and butter.

  8. Add garlic and onions to scallops.

  9. Drain Kale and add to scallops.

  10. Add 2 cups of squash "noodles" to scallop pan.

  11. Mix well and season to taste.
