Scallops and Asparagus with Garlic, Lemon, and Parsley

Recipe Ingredients for Scallops Gremolata

1 pound asparagus
2 tsp butter
2 tsp olive oil
1 tsp garlic
1 tbsp lemon juice
8 ounces scallops
2 tbsp parsley
1 tbsp bread crumbs

Recipe Directions for Scallops Gremolata

  1. Cut asparagus to 1/2 inch pieces, on the bias, leaving the tips whole. Place the pieces very quickly (1 minute) in boiling water and then remove; keep warm.

  2. Melt butter in olive oil over low heat. Add garlic and cook until translucent. Add lemon juice and scallops. Cook until scallops are just firmed on the outside. Remove from heat.

  3. Toss scallops in bread crumbs, parsley, and cooked asparagus. Top with any liquid remaining from the pan.
