Recipe Ingredients for Scallops in green sauce

2 oz watercress (one bunch)
2 tablespoons bottled Clam juice or chicken broth
1 medium onion, finely chopped
1 teaspoon ginger, minced
1/2 cup green bell pepper, finely chopped (1/2 medium pepper)
1/8 teaspoon salt
3/4 pound bay scallops

Recipe Directions for Scallops in green sauce

  1. wash watercress. Pat dry and chop.

  2. In a small saucepan, combine clam juice, onion, ginger, and green pepper. Cook over medium heat, until onion is softened, 3 to 5 min. Add water cress and salt. Cook, stirring ocasionally, until watercress wilts, 1 to 2 min.

  3. Stir in scallops. Cook, stirring frequesntly, 3 to 4 minutes, until scallops are opaque.
