Scallops baked in a cream sauce with spinach and mushrooms.

Recipe Ingredients for Scallops Florentine

10 unit 2 large or 5 small Scallops
5 large Mushrooms
5 piece whole Mushrooms, Brown, Italian, Or Crimini
1 tbsp Extra Virgin Olive Oil
9 serving Fats - Olivina (Lactantia)
0.25 cup Wheat Flour, White, All-purpose, Enriched, Bleached
250 mL Dairy - 1% Milk (Lactaid)
1 cup Cream, Fluid, Half And Half
2 clove Garlic
4 cup Spinach
250 mL Dairy - Grated Parmesan (Zerto)
0.5 cup, shredded Mozzarella, Part Skim Milk, Low Moisture Cheese
1 serving Breads - 100% Whole Wheat Bread (McGavins)
1 tsp Italian Seasoning

Recipe Directions for Scallops Florentine

  1. Quickly brown scallops i olive oil with garlic. (optional)

  2. Brown mushrooms.

  3. Place scallops and mushrooms in the bottom of a 9X13 pan.

  4. Tear spinach and cover scallops.

  5. Melt butter in a medium saucepan.

  6. Stir in flour and cook for 3 minutes.

  7. Add milk and half and half.

  8. Cook over medium low heat until thickened.

  9. Add seasonings to taste (salt, pepper, garlic etc.)

  10. Pour cream sauce over spinach.

  11. Cover with remaining cheese.

  12. Combine bread crumbs and italian seasoning and cover cheese.

  13. Bake at 350 for 20-25 minutes.

  14. Serve over whole wheat egg noodles.
