2 tbsp Butter
24 oz Sea Scallops
0.5 tsp Paprika
0.25 tsp Salt, Table
0.5 cup Orange Juice
1 tbsp Chipotle Peppers
0.25 cup, chopped Onions, Spring Or Scallions

Recipe Directions for Scallops with Chipotle-Orange Sauce

  1. Melt 1 tbsp butter in a large skillet coated with cooking spray over medium-high heat. sprinkle scallops with paprika and 1/8 tsp salt; add to pan, and cook 3 minutes on each side or until browned. Remove from pan; keep warm.

  2. Add juice and chile to pan, scraping pan to loosen browned bits. bring liquid to a boil; cook until reduced to 1/4 cup (about 1 minute). Add remaining butter and salt to pan; stir with a whisk. Serve sauce over scallops; garnish with green onions.
