Recipe Ingredients for scallops and chard

16 oz Sea Scallops
9 cup Chard, Swiss
3 tbsp Olive Oil
0.5 cup Light
0.25 Glass Wine
5 tbsp chopped Shallots
1 tbsp Unsalted Butter
0.13 cup Gold Medal All Purpose Flour
2 tsp Classic Dijon Mustard
0.25 oz Tarragon

Recipe Directions for scallops and chard

  1. wash, dry, chop chard

  2. sautee in oil, put to side

  3. wash, dry, season scallops

  4. dredge in flour, fry in oil, put to side

  5. chop, sautee shallot in oil

  6. add wine and simmer

  7. add broth, mustard tarragon, season

  8. remove from heat, add butter

  9. toss with greens and scallops
