Recipe Ingredients for scallops with cannelini beans & spinach / mashed cauliflower

8 oz scallops
1 1/2 cups cannellini beans
5 cups spinach
1/2 cup onion
2 tbsp garlic
1/10 tsp salt
1 tbsp olive oil
1/2 cup white wine
3/4 cup chicken broth
840 g cauliflower
8 tbsp light boursin

Recipe Directions for scallops with cannelini beans & spinach / mashed cauliflower

  1. sear scallops, remove from pan

  2. saute onion / garlic

  3. add white wine & reduce

  4. add spinach with 1/4 cup chicken broth

  5. add cannellini beans

  6. add shrimp, cook through

  7. serve with scallops on top

  8. for cauliflower

  9. steam in 3/4 cup chicken broth (about 12 minutes)

  10. mash with light boursin
