Scallps with pancetta nad asparagus - YUM

Recipe Ingredients for Scallops with asparagus and pancetta

2 unit 2 large or 5 small Scallops
0.5 cup Asparagus
2 1tsp Olive Oil
3 slices Pancetta
0.38 cup Orange Juice
0.5 Shot Vermouth
1 pat (1" sq, 1/3" high) Butter
1 tbsp chopped Chives
0.5 oz Parmesan, Hard Cheese

Recipe Directions for Scallops with asparagus and pancetta

  1. cut off asparagus tips to 2-1/2 inch spears. Coat with teaspoon olive oil, salt and pepper; roast at 475 for 6 minutes. Set aside.

  2. cut pancetta into small dice; cook until crisp. Set aside

  3. Add olive oil to drippings to equal 1 tablespoon.

  4. Sprinkle scallops on both sides with salt and freshly ground pepper; cook in drippings and oil until brown on both sides, about 5 minutes. remove from pan and keep warm.

  5. Heat skillet over medium hot heat; add orange juice and vermouth. Cook stirring constantly until reduced to 1/2 cup. Remove from heat and stir in butter.

  6. Place 4 scallps on each plate, arrange equal umber of asparagus soears onaround scallops. Drizzle with cause ans sprinkle with pancetta, chopped chives and shaved parmesan.
