I used a scalloped corn recipe, but substituted egg plant in its place.

Recipe Ingredients for Scallopped Egg Plant

3 eggs
12 oz. eggplant
20 Crackers Baked Whole Grain Wheat Reduced Fat
1 1/2 cup skim milk
1 oz. Smart Balance
1 oz. shredded Mexican Cheese 2%
1/2 cup onion

Recipe Directions for Scallopped Egg Plant

  1. Peel, slice and dice a medium-sized egg plant.

  2. Chop onion .

  3. Beat 3 eggs in a bowl..

  4. Add egg plant and onion to the egg.

  5. Layer half of the egg plant into a 1.5 quart casserole.

  6. Crush crackers. Put half of the crackers in dish over the layer of egg plant.

  7. Add remaining egg plant. Cover with remaining cracker crumbs. Heat milk and butter until hot, but not boiling. Pour milk and butter over the entire casserole. Bake at 350 degrees for 45 minutes. In the last 5 minutes, sprinkle with shredded cheese.
