Recipe Ingredients for Scalloped Tomatoes with Croutons

3 lb tomato, chopped
1/2 cup garlic, chopped
1/3 cup shallots, chopped
1 cup basil leaves, chopped
3 tsp salt
2 tsp black pepper
3 tbs raw sugar
4 cup croutons
4 tbs olive oil
4 oz smoked ham
2 cup parmesan cheese
1 cup italian cheese blend

Recipe Directions for Scalloped Tomatoes with Croutons

  1. Preheat the oven to 350°F.

  2. Heat olive oil in a large sauté pan over medium-high.

  3. Add the bread cubes and stir so that they are evenly coated with oil.

  4. Cook cubes, tossing frequently, until toasty on all sides, about 5 minutes.

  5. Meanwhile, combine tomatoes, garlic, sugar, salt and pepper in a large bowl.

  6. Roll 12 slices deli thin smoke ham, cut in half to yield 24 pieces.

  7. When the bread cubes are toasted, add the tomato mixture and cook them together, stirring frequently, for 5 minutes.

  8. Remove from heat, and stir in the basil.

  9. Pour into 2 shallow (6 to 8 cup) baking dishes, tuck in 12 pieces rolled smoked ham each dish, and top with Parmesan cheese.

  10. Bake 35 to 40 minutes until the top is browned and the tomatoes are bubbly.

  11. Serve hot or warm with a big green salad, a bean salad and/or a poached egg.
