Slight twist on the Shepard's Pie recipe, using sliced "Scalloped" style potatoes instead of mashed and adding a cheese topping.

Recipe Ingredients for Scalloped Shepard's Pie Casserole

1 lb lean ground beef
1 cup carrots, diced
1/2 cup celery, diced
1/2 cup white onion, diced
2 medium white potatoes, sliced
1 cup tomato soup
1/4 cup cheddar cheese, grated

Recipe Directions for Scalloped Shepard's Pie Casserole

  1. Saute vegetables in no-calorie cooking spray

  2. Brown grounds beef and add any seasonings

  3. Layer Ground Beef, Vegetables, and Potatoes in a casserole dish

  4. Pour tomato soup over all

  5. Cover with foil and bake in a 350 degree oven for 45 minutes, or until potatoes are tender with a fork

  6. Top with cheese and let melt
