Easy, and delish! Recipe calls for it to be done it the toaster oven, but I have also doubled the recipe on special occasions, adn cooked in a casserole dish in the oven.

Recipe Ingredients for Scalloped Potatoes for Two

1 pound potatoes (Pared & Sliced Thin)
1/4 cup onion (Sliced Thin)
2 tsp flour
1 1/4 cup 2% Milk
3 oz. Cream Cheese
2 tbsp. Butter
2 tbsp. Parmesan Cheese (Freshly Grated)

Recipe Directions for Scalloped Potatoes for Two

  1. Butter two individual oval au gratin dishes (8 x 4 inches, 1 1/2 to 2 cup capacity). Preheat oven or toaster oven to 350 degrees.

  2. Place half of the potatoes in the 2 dishes. Scatter the onion over; sprinkle each with flour, (salt and pepper if desired).

  3. Heat the milk and cream cheese in microwave for 2 minutes, use stick blender to blend cream cheese into milk. (If no stick blender, I have just used a wisk before.)

  4. Reheat the milk to simmer.

  5. Place remaining potato slices in the dishes. Pour over the milk; Dot with butter & sprinkle the top with Parm. cheese. Bake for 45 to 60 minutes or until potatoes are tender.
