A simple scalloped potatoes, made onion free with the addition of babyfood carrots.

Recipe Ingredients for Scalloped Potatoes

2 pounds potatoes, peeled and sliced
3 tbsp Smart Balance buttery spread
3 tbsp all purpose flour
1 tsp salt
1/2 tsp pepper
2 1/2 cups fat free milk
1 ounce carrots, pureed

Recipe Directions for Scalloped Potatoes

  1. Peel and slice potatoes.

  2. Melt Smart Balance in saucepan over low heat. Add carrots, flour, salt, and pepper. Stir until smooth and bubbly.

  3. Stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute.

  4. Grease casserole dish (2 quart). Layer in potatoes, covering each layer with sauce.

  5. Cover. Bake in a 350 degree over for 30 minutes.

  6. Remove cover. Continue to bake for one hour.
