Scalloped Potatoes with no cream or milk!

Recipe Ingredients for Scalloped Potatoes

1041 g. russet potatoes
168 g. onion
20 g. garlic
15 g. light butter
15 g. all purpose flour
240 g. beef stock
60 g. skim milk
60 g. Greek, Non-Fat, Plain Yogurt
1/4 t. salt
1/4 t. pepper
85 g. reduced fat cheddar

Recipe Directions for Scalloped Potatoes

  1. Preheat oven to 325.

  2. Slice potatoes and set aside.

  3. In a skillet, melt butter over medium heat. Add onion and garlic and saute until soft and translucent.

  4. Add flour and stir to coat onions.

  5. Add broth 1/4 cup at a time, stirring each time until thick.

  6. Add salt, pepper and parika.

  7. Remove from heat, and stir in mayo.

  8. In saucepan or in larger bowl, toss potatoes with sauce mixture.

  9. Pour into 9x13' greased pan.

  10. Bake for 2 hours or until potatoes are tender.

  11. Let stand 10 minutes.
