A classic preparating of a comfort food favorite. The white sauce goes together nicely.

Recipe Ingredients for Scalloped Potatoes

1/2 cup onion, chopped
1/4 cup margarine
1/4 cup flour
2 1/2 cups milk, fluid, lowfat
6 potatoes, sliced
1/2 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Scalloped Potatoes

  1. In a medium sauce pan, melt the margarine and cook the onion until soft. Stir in the flour and mix well. Remove pan from heat and slowly blend milk into mixture, stirring well. Return to medium high heat, and cook, stirring constantly, until mixture is thickened and bubbly. (Be patient.)

  2. In a buttered casserole, layer half of the potatoes, cover with half of the sauce, and repeat layers once. Cover and cook at 350 degrees for 35 minutes; remove cover and cook for another 30 minutes or until bubbly and cooked.
