Easy scalloped potatoes that aren't too heavy!

Recipe Ingredients for Scalloped Potatoes with Cream of Mushroom

4 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
1.5 tbsp Olive Oil
4 clove Garlic
1 tsp Salt, Table
1 cup leaves, whole Basil, Fresh
1.5 cup Organic Cream of Mushroom Soup
0.5 cup Calcium Enriched Reduced Fat 2% Milk
1 tablespoon Rosemary
0.33 cup Parmesan, Grated Cheese

Recipe Directions for Scalloped Potatoes with Cream of Mushroom

  1. Preheat oven to 410 degrees

  2. grease 9x9 baking dish with olive oil

  3. make "pesto" by chopping up basil 2 of the garlic cloves and adding 1 tsp of olive oil, put to side

  4. mix milk with mushroom soup, put to side

  5. slice potatoes 1/4 inch (or however you prefer)

  6. line baking dish with 1 layer of potatoes

  7. season with salt, pepper, half of rosemary (chopped fine), and 1 clove of garlic diced

  8. sprinkle about a tbsp of parmesan cheese

  9. pour half of soup mixture

  10. create another layer of potatoes, seasoning the same way, and pour rest of soup

  11. add any remain potatoes

  12. at pesto mixture to top

  13. sprinkle 1/4 cup parmesan evenly

  14. drizzle a bit of olive oil

  15. bake for 30-45 minutes, or until top is browning and potatoes are soft

  16. take out and cool

  17. enjoy!
