Recipe Ingredients for Scalloped corn

1 bell pepper
1/2 onion
2 tablespoons olive oil
3 cups creamed corn
1 1/2 cups whole kernel corn
2 eggs
1 cup bread crumbs
1/4 cup butter
1/2 tsp paprika
1/4 tsp pepper

Recipe Directions for Scalloped corn

  1. Saute pepper and onion in olive oil until tender.

  2. Cool a bit then add corn, eggs, and 1/2 cup of bread crumbs.

  3. Pour mixture into greased casserole dish.

  4. Combine remaining bread crumbs with melted butter and sprinkle over the top of mixture.

  5. Bake at 350 for 30-40 minutes until bubbly and topping is browned.
