Recipe Ingredients for Scallop, Tomato and Orange Salad

1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 Serving Tomatoes
1 fruit (2-5/8" dia) Oranges
1 serving Radishes
3 cups Sweet Baby Greens
1/2 cup Arugula
1 cup, chopped Watercress
24 oz Sea Scallops
0.5 serving Extra Virgin Olive Oil
2 tbsp Salted Butter

Recipe Directions for Scallop, Tomato and Orange Salad

Cut tomato into thin slices and cherry tomatoes in half, then slice a peeled orange into rounds. Thinly slice red radishes. Add baby greens, arugula and watercress. Season some sea scallops with salt and black pepper. Melt a few tbsp olive oil and butter in a nonstick skillet over medium high heat and saute scallops until golden on both sides and just done, about 5 minutes. Serve over salad with Pistachio Pesto dressing and extra chopped pistachios.
