Recipe Ingredients for Scallop salad - cheryl crow p 81

1/3 cup tomato
1 tsp butter
1/2 cup arugula
3 scallops
1 tsp canola oil
1/3 cup corn
1/4 cup leeks
1 tsp almond
1 tbsp wine
1 tsp garlic

Recipe Directions for Scallop salad - cheryl crow p 81

  1. Saute leeks and garlic in canola oil, add corn for 2 min, add wine and deglaze 30 sec. Add cherry tomatoes, arugula, butter

  2. Cook scallops in oil, 2-3 min, then turn and let sit in hot pan additional 2-3 min

  3. sprinkle ground Marcona almonds over the top

  4. top w/parsley oil
