Recipe Ingredients for scallop potatoes

3 cups sliced potato
1 cup soy milk
1 tablespoon corn starch
1/2 teaspoon parsley
1/4 teaspoon black pepper
1/4 teaspoon salt

Recipe Directions for scallop potatoes

  1. slice the potatoes thin (with or without skin)

  2. place in a baking dish

  3. mix the rest of the ingredients together and heat on low until it starts to thicken

  4. pour over the potatoes

  5. bake at 350 to 400 degrees for 1 hour
