Recipe Ingredients for Scallop Bisque

1 1/2 pound scallops, chopped
2 cloves garlic
8 ounce potato
4 cups fat free half and half
1 cup skim milk
1 cup vegetable broth
1 teaspoon thyme

Recipe Directions for Scallop Bisque

  1. Melt 1 pat of butter in pan and saute the garlic until fragrant - 2 minutes. Microwave the peeled potato until soft, add to garlic. Add scallops and lightly sautee until just browned. Add the thyme, salt and pepper. Add half and half, milk and broth and cook on low for 20 minutes.

  2. Using an immersion blender, puree. Season again with salt and pepper to taste.
